Primal Banana Bread (cake)

This recipe came from www.marksdailyapple.com one of rocofit’s favourite primal sites.  This is so simple, even if you’re not great at baking you can pull this one off.


Ingredients


2 cups almond flour

1 tsp baking soda

pinch of salt

3/4 cup crushed walnuts

2 medium eggs

2 ripe bananas

1/2 cup melted butter

Cinnamon and vanilla optional

Method
In one bowl mix all the dry ingredients. In a separate bowl mix the wet ingredients (banana, butter, eggs). Slowly add the wet ingredients to the dry. Be careful not to over mix.

Add to a lightly greased dish and bake for 30 minutes at 350F

Enjoy! This is lovely with a big cup of fresh mint tea.

ps The first time I tried making this was in Saudi Arabia and the cup in the photo was as lovely gift, it had to be included :)

    Wow. I just started the Paleo (primal) diet about 2 weeks ago and this bread is truely amazing! Why is it not good to eat regularly? Seems like it’s mostly just nuts (good fats), and eggs?
