Homemade Paleo Chocolate

This is so simple and delicious, it’s almost too good to be true!

Ingredients:

3 tablespoons organic coconut oil

3 tablespoons almond butter

4 tablespoons pure organic cocopowder

1 tsp vanilla extract

1-2 tablespoons organic or raw honey (this depends on your taste and how sweet you would like it)

Extra: Almonds, Walnuts, Brazil nuts…whatever you love!

Mix all the ingredients together using a double boiler (easy to do!)
Place in a tin or in separate moulds and freeze for 20 minutes

Be creative! Add your favourite nuts, shredded coconut, whatever you like that will still keep it healthy.

This is a an amazing treat and is far better than any store bought chocolate because you know exactly what’s in it.  Don’t be shy with the cocoapowder, it’s full of antioxidants!

    Okay, I’ve decided that I just might love you… this is SO good!
    I double it because my pan is too big and use 2 parts coconut oil to 1 part almond butter (so 1/2 cup coconut oil and 1/4 cup nut butter). I found when I made them equal it was a bit too soft for my preferences and was more like fudge than a chocolate bar.
    I use 2 T honey for a doubled recipe and add to the bowl 1/2 – 3/4 cup lightly-salted unshelled pumpkin seeds. I like to add a lot to stretch the (kind of expensive) recipe out, plus the crunch is amazing!
    So it’s more like a bark than a chocolate bar that way, but it is fantastic. The best part might be that it’s too bitter for my family so I get it all to myself. ;)

    Thanks so much for the recipe; this will be a go-to treat for a long, long time.

      You must have read my mind, I was just a talking about how it makes it difficult to take out to someone as it needs to be in the fridge as it’s more like fudge. Am looking forward to trying your version of it. Thank you!

    Thank you so much for this recipe. I am afraid to eat too much at one time!!! I might just try all of your recipes also. I really would like to do the workouts, wish I had a buddy to do them with. I currently just walk.

    Christina, how did the frozen raspberries work out? did you thaw and drain the juice first?

    Hi Cathy, you know I am such a lazy cook so all I did was take a couple of handfuls out of the freezer when I started to make the chocolate so they defrosted themselves. I popped two to three in each muffin paper cup before poring on the chocolate. After setting in the freezer, the raspberries are quite crunchy (but refreshing) but they soften up if you leave the chocolates at RT for a few minutes. Worked really well.
