Beetroot is one of those amazing vegetables that many people simply don’t know what to do with it. It’s a shame as beetroot is an
incredibly nutritious vegetable. It’s packed full of antioxidants and phytonutrients.
Beetroot is good for you heart, liver and boosts your immune system.
One way to have beetroot is as chips!
Recipe:
Cut off the stems (you can steam these and have them on their own)
Wash the beet root and slice off the ends
Slice the beetroot in very thin slices. It’s surprisingly easy to slice through.
Drizzle lightly with olive oil and a small sprinkling of sea or maldon salt
Spread out on a baking tray being sure slices do not overlap
Place in a pre heated oven at 180C for 20 minutes. Keep an eye on them as time will depend on how thickly you sliced it.
Remove from the oven and let sit for 10 minutes or until cool.
