Homemade Chili and Cauliflower Rice Recipe

photo 18 150x150 Homemade Chili and Cauliflower Rice RecipeThis is the perfect recipe for lunch, dinner and leftovers. It also freezes well making it a great back up dish for busy times.

Homemade chilli You Can’t Go Wrong With:

2 Onions

1-2 cloves of garlic

500g or more lean organic ground beef

1 Aubergine

1 Courgette

Handful of mushrooms

1 Tin chopped tomatoes

a tbsp tomatoe paste

Coconut Oil/ butter

spices, salt and pepper.

Brown the onions and garlic in a little coconut oil or butter.  Add the beef and stir until brown.  Then add chopped veggies, a tin of chopped tomatoes and tomato paste.  Finish by adding spices such as basil or dried herbs along with salt and pepper to taste.

Cook until all the veggies have cooked through.

You really can’t go wrong. Be creative with this one and add other veggies such as peppers or even squash.

Finally serve on our favourite rice substitute, cauliflower rice. See video below for the rice dish:

This chili dish doesn’t have beans as some traditional ones do.  This keeps it in line with paleo recipes and very low carb.
